Southwest Chicken Pasta Skillet with Tyson Southwest Pepper Trio

Finding my way back to the kitchen is not an easy task for me, especially since I am not a cook. Usually my husband makes dinner and during the early years of our marriage was when I discovered I was pregnant. The main food I ate was plain chicken breast. Nothing else at all, let alone southwest chicken pasta.

We can laugh about it now, but there were plenty of middle of the night feedings before the baby was born. Every single one of them involved a chicken breast, per my doctor’s orders.

Tyson’s brand new frozen chicken breasts inspired me to create a Southwest Chicken Pasta Skillet. If only I had these when I was pregnant.

To help launch their brand new products, Tyson mailed me Tyson Individual Frozen Chicken Breasts in the Smokey Steakhouse and Southwest Pepper Trio on dry ice to try ahead of time. I was so incredibly excited to receive these since Tyson and I go way back to my pregnancies.

When I opened the bag of Southwest Pepper Trio my nose went wild. The smell was simply amazing! If only there was a way to share the aroma with you through the screen.

The instructions on the bag shows the chicken is cooked in the oven or on a grill. Since our weather was very windy and dusty, using the outside grill was not an option so we chose to use a grill pan on the stove top. They cooked up beautifully.

Southwest Chicken Pasta Skillet

Ingredients:

  • 2 Tyson Southwest Pepper Trio Frozen Chicken Breasts
  • 1/2 pound rotini pasta cooked
  • 1/2 cup whole milk
  • 1 tablespoon butter
  • 1/2 cup organic salsa
  • 4 ounces of shredded Mexican cheese blend
  • 1 ounce cream cheese

Directions:

  1. Cook the chicken thoroughly using a grill pan.
  2. While the chicken is cooking, cook the pasta according to the directions on the box.
  3. In a small saucepan on medium-low heat, combine milk and butter. Once the butter is melted, add the salsa. Stir and mix thoroughly. Simmer for 3-5 minutes. Add shredded cheese and mix well. Cook down for 5-10 minutes. Add cream cheese and stir.
  4. Add chicken and pasta to a plate, then drizzle with cheese sauce.

Optional directions: After step 3, heat a frying pan to medium heat. Add pasta and cheese sauce. Continually stir until blended well then add the chicken. Continue stirring then serve.

Prep Time: 5 minutes
Cook Time: 25 minutes
Serves: 4

The verdict:
Me: Loved it!!!! Totally unlike me since I normally like food on the plain side.
9 year old son: Two thumbs up and asked for more.
7 year old son: Two thumbs up also and asked for more.
My husband: Quite happy to have found a new chicken he loves.
